The Best Brownies EVER. Smoked on the Rec Tec 700
This isn’t hyperbole, these really are the best brownies i’ve ever had and we added a different flavor profile by smoking them for the first half of the baking process. They are super chocolaty and moist and… perfect.
Ingredients:
- 8 oz 80% Dark Chocolate (Chopped) 
- 3/4 Cup Dutch Process Cocoa Powder ***(TOTAL, you use 1/4 cup when melting chocolate THEN 1/2 cup with the flour)*** 
- 1 Tbsp Espresso 
- 1 1/4 Cup Unsalted Butter 
- 2 Cups White Granulated Sugar 
- 1/2 Cup Dark Brown Sugar 
- 2 Tsp Vanilla Extract 
- 2 Tsp Kosher Salt 
- 6 Eggs 
- 1 Cup All Purpose Flower 
Directions:
- Butter a 9x13 baking pan. Line the baking pan with parchment paper, then butter the parchment paper to ensure brownies will come out cleanly 
- Chop dark chocolate into chunks and then place inside a large glass measuring cup 
- Add 1/4 cup Dutch Process Cocoa powder and espresso powder to the measuring glass with the dark chocolate and set aside. 
- Melt the butter and bring to a simmer 
- As soon as the butter comes to a simmer pour into the large measuring glass with the chocolate, dutch cocoa and espresso powder 
- Let it sit for 2 mins, then whisk together until smooth with no lumps 
- Add white and brown sugar and vanilla extract to kitchen aid mixing bowl 
- Mix on low until all ingredients are combined 
- Add one egg and mix until completely combined 
- Add the rest of the eggs one at a time 
- Mix on low for 10 minutes 
- Add melted chocolate mixture to the kitchen aid mixing bowl 
- Mix until all ingredients are completely combined (around 1 or 2 minutes) 
- Sift all purpose flour and 1/2 cup dutch process cocoa powder into the batter 
- Gently fold the batter together until all ingredients are incorporated and there are no more dry ingredients in the batter 
- Pour batter into your 9x13 baking pan 
- Level the batter and gently drop the pan 3 or 4 times on the counter to help level out the batter 
- Put into a preheated smoker (or oven) at 350 degrees for 20 mins 
- Remove from smoker or oven and drop the pan on the counter 5 or 6 times to remove any built up air in the batter 
- Put into the oven (at 350 degrees) for 25 minutes 
- Remove from the oven and let rest for 20 minutes 
- Grabbing the parchment paper remove the brownies from the baking pan and place on a cooling rack for 20 minutes 
- Cut the brownies however your like. 
- Serve with milk or ice cream
